They included descriptions of the cuisine in English, making exotic Peruvian dishes easy to understand to non-Peruvians. They consulted with native Spanish speakers, Edith Castro, from Peru and Susana Mate, from Spain. They made sure the Spanish used on the menu would be understandable to any Spanish speaker.
